Mediterranean Pasta Salad

Ingredients

  • 1 box (454g) fusili
  • 1 cup diced, seeded cucumber
  • 1 cup diced red bell pepper
  • 1 cup crumbled feta

Dressing

  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp salt
  • optional: 1 tsp chili flakes

Method

  1. Cook pasta per package directions
  2. Shock pasta in cold water to stop cooking, drain thoroughly
  3. Combine dressing ingredients in a large bowl
  4. Add pasta, pepper, cucumber and feta to bowl and combine
  5. Let it sit for at least 30 mins

NOTE: This is an excellent make-ahead recipe, will keep in the fridge for a week.
