Instant Ramen Pouches

### Ingredients
* 4 packages instant noodles
* 1 large carrot, sliced
* 1 stalk celery, sliced
* 1/4 cup onion, minced
* 6-8 mushrooms, sliced
* 20 large shrimp, raw, cleaned
* 4 cups vegetable broth (low sodium)
* 1/2 cup rice wine vinegar or mirin
* 1/4 cup soy sauce
* 2 tsp sesame oil (opt)

### Method
1. Pre-heat oven to 400 degrees F (205 degrees C)
1. Lay out 4 slices of foil (approx 18″ square)
1. Place one pack of noodles in the centre of each foil square
* **note**: *this can be cut to 1/2 pack for smaller appetites or less carbs*
1. Layer the veggies on top of the noodles in this order: mushrooms, carrots, celery, onion
1. Lay the shrimp on top of the pile
1. Gather up the corners of the foil to make a pouch and place each one on a cookie sheet
1. Mix the liquid ingredients together and distribute evenly among the packets
1. Pinch the packets most of the way shut leaving a small hole for steam
1. Bake for 15-18 minutes, until shrimp is cooked

**Protein Substitutions**: *Other proteins can be substituted for the shrimp. Raw proteins like chicken or beef should be sliced thin to ensure they cook.*
**Veggie Substitutions**: *Any other veggies can be added as long as they are sliced appropriately. Softer items like zucchini can be sliced a bit thicker.*
