Baked Mac and Cheese

Ingredients

  • 454g Macaroni (or other tube pasta)
  • 4 tbsp + 3 tbsp butter
  • 1/2 cup onion, minced
  • 4 tbsp flour
  • 2 tsp dry mustard
  • 1 tsp + 1 tsp garlic powder
  • 2 cups Buttermilk
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1 package "Maclaren's imperial cheese", rougly chopped

Method

  1. Pre-heat oven to 425 degrees F (220 degrees C)
  2. Prepare pasta per package instructions
  3. Melt 4 tbsp butter in a large skillet
  4. Add onion, sweat for 3 mins
  5. Add flour, mustard and 1 tsp garlic powder, mix until well combined, and the mixture begins to brown
  6. Add the dairy and whisk thouroghly to eliminate lumps
  7. Simmer for 2-3 minutes until the bechamel thickens
  8. Remove from the heat and add the cheese, stirring to incorporate. If the cheese doesn't melt completely, place back over low heat for a couple of minutes and remove again.
  9. Drain and incorporate the pasta into the sauce
  10. If skillet is not oven safe, transfer to a baking dish
  11. Melt 3 tbsp in a microwave-safe bowl
  12. Stir in breadcrumbs, parmesan cheese and 1 tsp garlic powder
  13. Sprinkle breadcrumbs over pasta
  14. Bake for 20-25 minutes until mixture bubbles
  15. If desired, broil for 3-5 minutes to brown the topping
