Banana Zucchini Muffins

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 4 bananas, mashed
  • 1 cup zucchini, grated
  • 1/3 cup brown sugar
  • 1 egg, beaten
  • 1/2 cup butter, melted
  • 1 tsp vanilla
  • optional 1/3 cup shredded unsweetened coconut
  • optional 1/3 cup chopped walnuts

Method

  1. Pre-heat oven to 350 degrees F (180 degrees C)
  2. Combine sugar, bananas, zucchini, butter, egg and vanilla in a mixing bowl
  3. Mix remaining ingredients in a large bowl
  4. Pour wet over dry and mix just until combined
    • DO NOT OVERMIX YOUR MUFFINS
  5. Portion into muffin tins and bake for 20-25 minutes
    • For mini-muffin tins, bake 15-20 mins
